At the base is my Flourless Dark Chocolate Sponge – rich, gluten-free, and deeply flavoured, offering a tender structure without flour. The mousse layer is adapted from my Hazelnut and Coffee Tart, using smooth milk chocolate for a creamy, balanced texture that complements the sponge. To finish, a glossy Dark Chocolate Mirror Glaze adds sheen and contrast, poured only over the mousse disk for a clean, modern look. Each element is designed to be approachable for home bakers, with clear steps and reliable results.

Prepare the tart shell and chocolate sponge in advance. Then, make the milk chocolate mousse and vanilla white chocolate Chantilly cream, placing both in the fridge to stabilise. Once chilled, fully whip both components. To assemble quickly, embed the sponge directly into the milk chocolate mousse and pipe the Chantilly cream on top.

Ingredients
  

Milk Chocolate Mousse (~350 g Use: Insert or piped layer in tart)

  • 2 g powdered gelatine
  • 10 g cold water for blooming
  • 85 g milk
  • 85 g milk chocolate finely chopped
  • 165 g heavy cream 35% fat cold

Vanilla White Chocolate Chantilly (~600 g)

  • 110 g whipping cream 35% for melting chocolate
  • 10 g honey
  • 170 g white chocolate finely chopped
  • 300 g whipping cream 35% cold
  • 1 vanilla bean

Flourless Dark Chocolate Sponge

  • 110 g dark chocolate 60–70%
  • 55 g unsalted butter
  • 110 g granulated sugar
  • 100 g eggs approx. 2 medium eggs

Instructions
 

Milk Chocolate Mousse

  • Combine powdered gelatine with cold water and let bloom for at least 10 minutes.
  • Bring milk to a simmer, then add bloomed gelatine and stir until fully dissolved.
  • Strain the hot milk over the chopped milk chocolate. Let sit for 1 minute, then emulsify with a stick blender until smooth.
  • Pour in cold cream and continue blending until fully combined.
  • Transfer to a shallow container, cover with cling film touching the surface. Chill in the fridge for 5 hours.
  • Whip fully and pipe into mould to freeze for use as an insert. Alternatively, pipe directly into the tart shell alongside Chantilly cream and sponge.

Vanilla White Chocolate Chantilly

  • In a small saucepan, combine 110 g cream, honey, and scraped vanilla bean. Bring to a simmer.
  • Remove the vanilla bean and pour the hot mixture over chopped white chocolate. Let sit briefly, then emulsify with a stick blender until smooth.
  • Pour in cold cream and continue blending until fully combined.
  • Transfer to a shallow container, cover with cling film touching the surface, and refrigerate for 6–8 hours.
  • Whip fully before piping into tart shell or using as decoration.

Flourless Dark Chocolate Sponge

  • Melt the butter in a small saucepan over low heat. Add chopped chocolate and stir until smooth. Alternatively, place both ingredients in a heatproof bowl and melt over a bain-marie (water bath) or microwave in short bursts, stirring between each. Avoid overheating.
  • Remove from the heat. Add sugar and eggs directly to the warm mixture. Mix until the batter is homogenous.
  • Pour the batter into 18 cm cake ring or silicone moulds. Using an offset spatula, level to an even thickness of approximately 1.5 cm. Bake at 165 °C for 20 minutes, or until the surface is set with a slight bounce when gently pressed.
  • Allow the sponge to cool completely at room temperature. Transfer to the freezer and chill until firm for easier assembling.
