Ingredients
  

Blueberry Mousse (~650 ml)

  • Set height: Approx. 2.5–3 cm in a 24 cm ring
  • 3 g powdered gelatine
  • 15 g cold water for blooming
  • 120 g blueberry purée
  • 220 g white chocolate
  • 220 g cold cream 35%

Blueberry Jelly (~220 ml)

  • Set height: 2 cm in a 20 cm ring
  • 155 g blueberry purée
  • 10 g lemon juice
  • 40 g sugar
  • 8 g cornstarch
  • 4 g powdered gelatine
  • 20 g cold water for blooming

Amaretto Chantilly Cream (~300 ml)

  • 2 g powdered gelatine
  • 10 g cold water for blooming
  • 40 g heavy cream 35% for heating
  • 30 g sugar
  • 30 g Amaretto 24% ABV
  • 200 g cold heavy cream 35% for whipping

Instructions
 

Blueberry Mousse

  • Bloom gelatine in cold water and let sit for 10 minutes.
  • Halfway melt white chocolate.
  • Bring blueberry purée to a simmer, then add bloomed gelatine and stir to dissolve.
  • Pour hot purée over white chocolate and blitz with a stick blender until fully emulsified.
  • Continue blitzing while adding cold cream gradually.
  • Transfer to a shallow container and cling wrap to touch surface. Refrigerate at least 6 hours.
  • Fully whip before use.

Blueberry Jelly

  • Bloom gelatine in cold water and let sit for 10 minutes.
  • Place blueberry purée and lemon juice in a saucepan.
  • Mix sugar with cornstarch and whisk into cold purée.
  • Bring to a boil and cook for 1 minute, stirring constantly.
  • Remove from heat and add bloomed gelatine, stirring to dissolve.
  • Pour into silicone mould as demonstrated in video.
  • Freeze until solid.

Amaretto Chantilly Cream

  • Combine gelatine and water in a small bowl. Let sit 10 minutes.
  • Warm 40 g cream with sugar and Amaretto just below boiling.
  • Remove from heat, stir in gelatine until fully dissolved.
  • Pour into cold 200 g cream and blend with stick blender.
  • Cover and refrigerate 6 hours or overnight until fully set.
  • Fully whip before use.

Assembly Instructions

  1. Fully whip the blueberry mousse and Amaretto Chantilly until medium peaks form.
  2. Cut Joconde sponge to fit the base of the tart shell.
  3. Pipe a 7 mm layer of blueberry mousse into the tart shell using a round 7 mm nozzle. Smooth gently if needed.
  4. Place the Joconde sponge centrally over the mousse layer, pressing lightly to level.
  5. Pipe another 7 mm layer of blueberry mousse over the sponge, ensuring full coverage and a clean edge.
  6. Arrange two blueberry jelly rings on top, spaced evenly and flush with the mousse surface.
  7. Pipe Amaretto Chantilly around the jelly rings using a round or star nozzle, depending on desired finish.
  8. Refrigerate for 3–4 hours to fully defrost the jelly layer and allow the mousse and Chantilly to stabilise.
