
I’m excited to share my journey with you – one shaped by bold decisions, relentless curiosity, and an obsession with flavour. For many years, I worked as a Sales Manager in the fast-moving world of IT. It was a career marked by structure, deadlines, and measurable success. But over time, I realised it wasn’t enough. The work lacked soul. I wanted more than performance reviews and corporate milestones – I wanted to build something real, something that spoke to who I truly was.
I’ve always been drawn to making things with my hands. Long before I made the decision to change careers, the kitchen was where I went to reset, recharge, and create. The combination of precision and creativity in pastry fascinated me. I didn’t want to just bake – I wanted to understand the science, the textures, the balance of flavour. That desire kept growing until ignoring it was no longer an option.
So I left behind the safety net of a comfortable job and started over. I enrolled in pastry school in Melbourne and committed fully. I asked questions, chased every detail, and treated each day as an opportunity to refine my technique. I wasn’t interested in shortcuts – I wanted to know why things worked, how flavours behaved, how to layer structure and taste with intention. That focus led to one of my proudest achievements: receiving the Excellence in Culinary Arts Award in Patisserie in 2023.

But the story doesn’t end in the classroom.
Today, I teach pastry through video, focusing on the techniques and flavour ideas I’ve developed through hands-on work in the kitchen – day after day, recipe after recipe. My approach to recipe development is grounded in clarity and structure, with flavour combinations that are bold, refined, and balanced. Whether it’s constructing a mousse cake, building layers in a tart, or creating stable components for clean assembly and storage, everything I share is practical, precise, and built with purpose.
This is not about chasing trends or replicating what’s already been done. It’s about building a deep understanding of pastry—so that anyone, regardless of background or training, can create something exceptional.
