This chocolate and hazelnut mousse strikes the perfect balance between rich nutty depth and smooth chocolate creaminess. It’s made with a milk and honey base, real hazelnut paste, and a blend of milk and dark chocolate for layered flavour. The mousse sets beautifully with gelatine and finishes light and silky thanks to the whipped cream folded through. Use it in tarts, layered mousse cakes, or glass verrines – wherever you want an intense flavour and clean texture without excessive sweetness. It’s stable, sliceable, and built to elevate your desserts with structure and taste.
Watch how to make chocolate and hazelnut mousse step by step:
This video shows you how to make the perfect emulsion with milk, chocolate, and hazelnut paste — and how to fold in the cream without deflating the texture. For visual learners, each stage is demonstrated clearly so you can see the exact consistency, texture, and timing rather than guessing. I’ll also show you when and how to add the gelatine for a smooth, stable set, ensuring the mousse holds its shape across different formats – from tart rings and cake inserts to larger moulds – while still keeping a light, creamy finish.
