Light Cream Cheese Mousse – No Freezing Between Layers
This mousse is a light and balanced version of classic cream cheese frosting – brightened with lemon juice, stabilised with gelatine, and folded with softly whipped cream. It gives the structure and smoothness needed for a refined carrot cake with cream cheese mousse, without the heaviness of traditional frosting. Unlike most mousse cakes, this version doesn’t require freezing between layers: the sponge inserts go in fresh, and the whole dessert needs just one final freeze before unmoulding. Or skip the mould completely – layer it into glasses for a simple glass dessert. Just chill for 2 hours in the fridge to set.

Carrot Cake with Cream Cheese Mousse
Equipment
- Digital kitchen scales
- Mixing bowls
- Fine grater or food processor
- Spatula
- Whisk or electric mixer
- Small saucepan
- Cookie cutters (10–7 cm)
- Stainless steel rings or small baking tray
- 2 × 1 kg yoghurt tubs
- Baking paper Silicone mat
Ingredients
Carrot Sponge
- 225 g peeled, grated carrot
- 175 g plain flour
- 200 g granulated sugar
- 85 g brown sugar
- 6 g baking soda
- 2.5 g salt
- 4 g ground cinnamon
- 160 g neutral oil e.g. canola
- 2 large eggs 100 g total
- 5 g vanilla extract
Cream Cheese Mousse
- 450 g cream cheese room temperature
- 170 g granulated sugar
- 12 g gelatine powder
- 60 g cold water for blooming
- 40 g lemon juice
- 5 g lemon zest
- 450 g whipping cream 35% cold
Walnut Crunch Base
- 100 g chopped toasted walnuts
- 35 g white chocolate
- 5 g neutral oil
Instructions
Carrot Sponge
- Preheat oven to 165°C (fan-forced).
- Line a flat tray with baking paper. Bake the batter directly in stainless steel cookie rings (10–7 cm) or choose a tin that fits the number of sponge disks you plan to cut — 6 to 8 per recipe.
- Wash, peel, and trim the carrots. Grate or blitz in a food processor until fine.
- In a large bowl, sift together the flour, white sugar, brown sugar, salt, baking soda, and cinnamon.
- Add oil, eggs, and vanilla. Stir until just combined — the batter will be thick.
- Fold in the grated carrot.
- Bake for 25–30 minutes, or until a skewer inserted comes out clean and the surface is golden and springy.
- Cool completely before unmoulding or cutting sponge disks (10–7 cm). Use 3 inserts per cake for a lighter mousse ratio, or 4 for more sponge.
Cream Cheese Mousse
- Bloom gelatine in cold water (60 g). Let sit for 10 minutes.
- Semi-whip the cold cream to soft peaks. Refrigerate.
- In a saucepan, heat lemon juice, sugar, and zest until hot but not boiling.
- Remove from heat and stir in bloomed gelatine until fully dissolved.
- In a bowl, whisk cream cheese until smooth.
- Pour hot lemon mix over cream cheese and whisk until fully incorporated.
- Fold in whipped cream in two additions until smooth and light.
- Use immediately to fill your moulds.
Walnut Crunch Base
- Chop toasted walnuts finely.
- Melt white chocolate and oil together.
- Mix with the nuts, spread on a frozen sponge or cake base layer. Chill to set.
