Equipment

  • Digital kitchen scales
  • Mixing bowls
  • Whisk or electric mixer
  • Small saucepan

Ingredients
  

  • 450 g cream cheese room temperature
  • 170 g granulated sugar
  • 12 g gelatine powder
  • 60 g cold water for blooming
  • 40 g lemon juice
  • 5 g lemon zest
  • 450 g whipping cream 35% cold

Instructions
 

  • Bloom gelatine in cold water (60 g). Let sit for 10 minutes.
  • Semi-whip the cold cream to soft peaks. Refrigerate.
  • In a saucepan, heat lemon juice, sugar, and zest until hot but not boiling.
  • Remove from heat and stir in bloomed gelatine until fully dissolved.
  • In a bowl, whisk cream cheese until smooth.
  • Pour hot lemon mix over cream cheese and whisk until fully incorporated.
  • Fold in whipped cream in two additions until smooth and light.
  • Use immediately to fill your moulds.
