Cheesecake filling (~750 ml)

  • 250 g whipping cream cold
  • 7 g gelatine
  • 40 g water cold
  • 90 g blackcurrant syrup
  • 15 g lemon juice
  • 1 Lemon zest
  • 80 g sugar
  • 250 g cream cheese cold

Stable Chantilly Cream (~300 ml)

  • 2 g powdered gelatine
  • 10 g cold water for blooming
  • 50 g heavy cream 35% for heating
  • 25 g sugar
  • 10 g Crème de cassis or replace with blackcurrant syrup
  • 1 g vanilla paste or finely grated lime zest optional
  • 200 g cold heavy cream 35% for whipping

Instructions
 

Cheesecake filling

  • Bloom the gelatine in cold water.
  • Semi whip the cream and keep it in the fridge.
  • In a small saucepan, simmer the blackcurrant syrup, lemon juice and sugar. Add the bloomed gelatine mass and stir to dissolve.
  • Pour the hot mixture over the cream cheese block and blitz with a stick blender until smooth. The mixture should be around 25°C (77°F). Cool it down if it is warmer.
  • Fold in the semi‑whipped cream in a few additions.
  • Fill the silicone mould and freeze for 8 hours or overnight.

Stable Chantilly Cream

  • Combine gelatine and water in a small bowl. Let sit 10 minutes.
  • Warm 50 g cream with sugar just below boiling.
  • Remove from heat, stir in gelatine until fully dissolved.
  • Add liquor, stir well.
  • Pour into cold 200 g cream and blend with stick blender.
  • Cover and refrigerate 6 hours or overnight until fully set.
  • Fully whip before use.

You can use more blackcurrant syrup for flavour instead of Crème de Cassis. It is sweeter, so remove the sugar and increase the blackcurrant syrup to 35 g to keep the balance right.
Stable Chantilly Cream is given in the minimum workable amount. Double the recipe if you plan to assemble all the tarts with a generous amount of whipped cream.
