Ingredients
  

Financier Sponge

  • 65 g unsalted butter
  • 40 g flour
  • 120 g caster sugar
  • 90 g almond meal
  • 100 g egg whites
  • Zest of ½ lemon

Raspberry Crémeux (approx. 245 g)

  • 90 g raspberry purée
  • 10 g Chambord raspberry liqueur
  • 54 g egg yolks ~3 yolks
  • 35 g sugar
  • 2 g gelatine powder
  • 10 g cold water
  • 45 g butter

Raspberry-Chocolate Mousse (approx. 315 g)

  • 50 g heavy cream base cream 1
  • 50 g raspberry purée
  • 5 g raspberry liqueur 50%
  • 2 g powdered gelatine
  • 10 g cold water for blooming
  • 100 g white chocolate
  • 100 g heavy cream whipped cream 2

Dark Chocolate Cherry Mousse (approx. 615 g)

  • 60 g cherry purée
  • 20 g cherry brandy or white rum
  • 80 g heavy cream 35% 1
  • 25 g sugar
  • 145 g dark chocolate 65%
  • 20 g salted butter
  • 280 g heavy cream 35% 2

Cocoa Nibs Crunch Layer

  • 100 g dark chocolate 65–75%
  • 20 g neutral oil grapeseed oil or canola oil
  • 20 g cocoa nibs

Instructions
 

Financier Sponge

  • Make brown butter (beurre noisette), strain, and cool to lukewarm.
  • Mix sugar, almond meal, and flour.
  • Lightly whisk the egg whites, then stir in the dry mix and lemon zest.
  • Gradually add the brown butter, mixing until smooth.
  • Spread evenly onto a 25 × 15 × 1 cm (10 × 6 in) silicone mat (or pipe desired size)
  • Bake at 190 °C (374 °F) for 15–20 minutes, until golden.
  • Cool on a wire rack, then cut to shape. Freeze for easier assembly.

Raspberry Crémeux

  • Bloom the gelatine powder in cold water.
  • Warm the raspberry purée and Chambord in a saucepan.
  • In a separate bowl, whisk egg yolks and sugar until smooth.
  • Gradually pour the yolk mixture into the warm purée, stirring continuously.
  • Cook over low heat, stirring constantly, until the mixture reaches 82°C (179.6°F).
  • Remove from heat, add the bloomed gelatine, and mix until fully dissolved.
  • Cool to 40°C (104°F), add the butter, and emulsify with a hand blender until silky and glossy.
  • Pour into moulds and freeze completely.

Raspberry–Chocolate Mousse

  • Bloom the powdered gelatine in cold water for at least 10 minutes.
  • Semi-whip the cream (2) and refrigerate.
  • In a saucepan, combine the base cream, raspberry purée, and raspberry liqueur. Heat to approximately 80°C (176°F).
  • Remove from heat and stir in the bloomed gelatine until fully dissolved.
  • Pour the hot mixture over the white chocolate in a tall container and emulsify with a stick blender until smooth.
  • Cool the base to around 30 °C (86 °F). Fold in the semi-whipped cream in two additions until fully incorporated.
  • Fill the silicone mould halfway, add the frozen insert of raspberry crémeux, and freeze completely.

Dark Chocolate Cherry Mousse

  • Semi-whip Cream (2) just until very soft peaks form. Keep chilled.
  • Heat cherry purée, Cream (1), and sugar to 82°C (180°F).
  • Pour the hot mixture over the chocolate in a tall container and emulsify with a hand blender until smooth.
  • Cool to 40°C (104°F), add butter, and emulsify again.
  • Fold in the semi-whipped cream until fully smooth and uniform.
  • Assemble immediately using frozen inserts. Pipe for precision. Freeze.

Cocoa Nibs Crunch Layer

  • Blitz the cocoa nibs in a food processor until they resemble coarse sand. Do not grind to a paste — you want fine, crisp particles.
  • Melt the dark chocolate gently: Option 1. Use short microwave bursts (10–15 seconds at a time), stirring between each, or Option 2. Place the bowl over a warm water bath (not boiling; avoid steam contact).
  • Stir in the neutral oil until the chocolate is fluid and glossy. The oil prevents the layer from becoming rock-hard once frozen.
  • Fold in the crushed cocoa nibs.
  • Spread a thin, even layer over a frozen cake or insert. It will set quickly due to the temperature.
  • Return to the freezer immediately to firm fully.

Working with the Silikomart Nutcracker Bûche Mould

This buche entremet was built in the Silikomart Nutcracker Bûche mould, which is narrow and tall, making assembly a bit tricky. On my first attempt, several details required adjustments:

Inserts: None of the available inserts fit perfectly. The grey insert accommodates only a narrow filling, so if you want to create a double insert like I did, the frozen pieces need to be trimmed before assembly. The longer insert works better overall, but it’s too wide for the narrow part. On my next attempt, I plan to rotate it 90 degrees to fit more precisely.

Air Pockets: Very fine details in the silicone mould can trap air, which is difficult to correct before spraying the velvet coating. Using a non-whipped namelaka mousse next time may help the filling flow into these small cavities more effectively.

Feet of the Mould: The thin feet were challenging to unmould without breaking. Since Silikomart provides no specific instructions for this mould, I plan to start unmoulding from the feet next time, gently pushing before moving to the head. Broken feet can be patched with Swiss meringue or decoration.

Pastry doesn’t always come out perfect on the first try, but careful planning, trimming, and strategic finishing touches allow you to achieve a polished result despite minor flaws.

Silikomart Nutcracker Bûche Insert. Entremet recipe.

The sponge insert for this buche entremet requires some adjustment, as there is no specific cutter available for the Silikomart Nutcracker Bûche mould. You will need to trim the sponge with a rolling cutter to fit it properly inside. Depending on your preference, you can use two sponge layers for a more cake-like texture or a single sponge layer if you prefer a lighter, mousse-forward entremet. Careful trimming ensures a precise fit and maintains clean lines during assembly.
