Banana Sponge Cake Made Easy – Moist, Tender Base for Entremets

This soft and moist banana sponge cake is a key element in my Banana, Passion Fruit & Milk Chocolate Mousse Cake (Recipe 004). It’s flexible enough to use as a base or insert for layered desserts and mousse cakes, with a light structure that holds its shape without becoming dense or stodgy. Made with real banana purée and simple pantry ingredients, this sponge delivers a natural banana flavour without artificial additives.

  • Silicone mat or baking paper
  • Stand mixer or hand mixer
  • Spatula
  • Digital kitchen scales

Ingredients
  

  • 85 g Egg whites
  • 80 g Sugar
  • 65 g Bananas mashed with a fork
  • 67 g Almond flour
  • 28 g Icing sugar
  • 33 g Plain flour
  • pinch Cinnamon
  • pinch Salt

Instructions
 

  • Preheat oven to 160°C (320°F), fan forced.
  • Whip the egg whites and sugar to stiff meringue.
  • Sift together almond flour, icing sugar, flour, cinnamon and salt.
  • Fold mashed banana into the meringue, followed by the dry ingredients.
  • Line a tray with a silicone mat and spread batter evenly to 1 cm (0.39 in) height. Or pipe into 16 cm (6.3 inches) rings using a 10 mm nozzle.
  • Bake for 15 minutes, until lightly golden and springy.
