Ingredients
Mascarpone Mousse (~625 ml)
- 210 g thickened cream 35%
- 25 g Tia Maria
- 50 g egg yolks ~ 3 yolks
- 63 g sugar
- 4 g gelatine powder
- 20 g water
- 250 g mascarpone
Instructions
Mascarpone Mousse
- Bloom gelatine in cold water.
- Whisk egg yolks with sugar until just combined.
- Bring cream and liqueur to a gentle simmer. Temper the yolks with half of the hot mixture, then return everything to the saucepan. Cook to 82°C (180°F), stirring constantly.
- Add bloomed gelatine, stir to dissolve, then strain through a fine sieve. Cover with cling film directly touching the surface and refrigerate overnight.
- Next day: Bring the custard base to room temperature (18–20°C / 64–68°F) — use short microwave bursts or leave it for about 30 minutes at room temperature. Add cold mascarpone, mix until combined, and whip to a fluffy consistency (about 1 minute on medium speed).
- To assemble: Use the mascarpone mousse to assemble an entremet with prepared inserts and freeze completely before glazing, or pipe into ramekins and refrigerate for 1–2 hours, until fully set.

Whipping and Using Mascarpone Mousse
The next day — or after at least five hours in the fridge — remove the custard base and whisk it lightly for about one minute. Ensure it’s at room temperature, around 18–20°C (64–68°F). This step is important for smooth incorporation and a stable texture.
Loosen the cold mascarpone cream slightly with a whisk, then combine it with the custard base. Using a mixer fitted with a whisk attachment, whip the mixture on medium speed for about one minute, just until it becomes lighter and more airy. Avoid overwhipping — mascarpone contains a high fat content, and excessive mixing can cause it to split.

If you’re using this mousse to assemble an entremet, transfer it into a piping bag. Piping helps fill the mould evenly and prevents air pockets. When filling, press the nozzle deep into the mould — the pressure will help push out any trapped air, ensuring a perfectly smooth, even finish once set.
