For the tart base, I use my Chocolate Shortcrust Pastry, a cocoa-rich dough that bakes cleanly without the need for lining or blind baking. It’s crisp yet tender, holds its shape beautifully, and pairs well with layered textures. The sponge layer is a Flourless Dark Chocolate Sponge that’s intentionally low-tech: no whipping, folding, or delicate timing. Just four ingredients, mixed and baked into a stable, flavour-forward layer that supports the mousse without overpowering it. Ingredients
  

Coconut Mousse (Yields ~330 ml)

  • 2  g powdered gelatine
  • 10  g cold water for blooming
  • 70   g coconut cream
  • 20   g coconut liquor
  • 140  g white chocolate
  • 150  g cold cream 35%

Flourless Dark Chocolate Sponge (Yields two 16 cm round sponges)

  • 110 g dark chocolate 60–70%
  • 55 g unsalted butter
  • 110 g granulated sugar
  • 100 g eggs approx. 2 medium eggs

Instructions
 

Coconut Mousse

  • Bloom gelatine in cold water.
  • Heat coconut cream and coconut liquor to a simmer.
  • Add bloomed gelatine and stir until fully dissolved.
  • Pour hot mixture over half-melted white chocolate (microwave ~1 min).
  • Emulsify until smooth. While blitzing, stream in cold cream.
  • Refrigerate for at least 6 hours or overnight.
  • Fully whip before use.

Flourless Dark Chocolate Sponge

  • Melt the butter in a small saucepan over low heat. Add chopped chocolate and stir until smooth. Alternatively, place both ingredients in a heatproof bowl and melt over a bain-marie (water bath) or microwave in short bursts, stirring between each. Avoid overheating.
  • Remove from the heat. Add sugar and eggs directly to the warm mixture. Mix until the batter is homogenous.
  • Pour the batter into cookie rings sized to fit your chosen yoghurt or silicone moulds. Using an offset spatula, level to an even thickness of approximately 1 cm. Bake at 165 °C (329 °F) for 20 minutes, or until the surface is set with a slight bounce when gently pressed.
  • Allow the sponge to cool completely at room temperature. Transfer to the freezer and chill until firm.
